Processed red meat is classified as carcinogenic and unprocessed red meat as probably carcinogenic by IARC, and both are linked to cardiovascular risk in higher amounts. Modest amounts of lean unprocessed red meat within a good overall diet is a reasonable compromise.
The strongest signal is for processed meat — sausages, salami, bacon, ham — which is classified as a Group 1 carcinogen. Unprocessed red meat sits in Group 2A.
Preparation matters: heavy charring and repeated high-temperature grilling generate additional carcinogenic compounds. Slow cooking and marination reduce them.
